Please allow time for confirmation and shipping to ensure your oysters will be delivered on time. To secure your order on time, place your order form in advance. Payment is required prior to your oysters being sent.

Our oysters are some of the best quality oysters in the world with their sweet and salty ocean flavour.

Wild West Oysters are delivered with an unbroken cold chain and stored between 4-8°C from the moment they are bagged until they are delivered to ensure the freshest produce. We recommend storing your oysters at this refrigerated temperature.

If you are wanting to store your oysters in an esky, be mindful that ice placed directly on the oysters will kill them. You will need use a barrier such as a hand towel between them.

If your bag is wet upon delivery, that’s normal. It’s usually because the bag was wet during the packing process and it won’t do any harm to your produce.

Bringing an esky to pick up your oysters will ensure the quality of your produce is maintained and contained.

Unless you are going to eat your oysters straight away, it’s best to buy them unopened. Given the proper care, oysters will live for 5-7 days after being harvested. You can keep live oysters in the fridge. If you want to keep them in an esky. Ideally, the esky should be about 4°c, try and keep them cool with either ice or ice packs. Place a hessian bag or towel between the two, as ice directly can kill the oysters. Once opened, oysters will keep for up to 3 days in the fridge.

Once purchased, check your live oysters, make sure the shells are firmly closed. Discard any that are open or appear to have lost their water. Once open use as little water as possible to give them a quick clean, avoid using too much water as you lose the juices when you wash them!

-Worcestershire sauce (for a sweeter taste, exchange for BBQ sauce)

-Ground pepper

Method

Open oysters and cook on an oven tray in the oven until meat has cooked. Meat will appear firm, some remaining juices will remain in the shell. Remove from the oven and place desired mixture onto the oyster and grill.

Step by step breakdown

1. Fold a kitchen towel in half lengthwise and place on a work surface.
   

2. Get your preferred oyster knife.
   

3. Put an oyster onto the towel with the hinge facing towards you. If you're using a glove, now is a good time to put it on.
   

4. Fold part of the towel on top of the oyster, placing your hand on top and tucking your thumb underneath the towel.
   

5. Stick the oyster knife into the oyster at ten to two o’clock
   

6. Wiggle the knife into the oyster until it gives slightly and twisting your hand to pry it open a bit more. Keep a tight grip on the oyster to prevent slipping and injuries.
   

7. Once the oyster is slightly open, slide the knife along the top shell to separate the muscle. -Then pull the top shell off to reveal the shucked oyster.
   

8. Turn the oyster over to present it.
   

9. Repeat the shucking process for the remaining oysters.
