It was in the pristine waters of Smoky Bay, on the Eyre Peninsula, South Australia where Wild West Oysters was born.
Mark and Nathalie Binder established the business in 2007 and have forged a reputation for producing some of the finest oysters in Australia and, indeed, around the world.
Our award-winning Pacific Oysters are grown in a cultivated marine environment, with an untouched environment with low rainfall and low population.
Our produce has an oceanic, sweet and salty taste you can’t experience anywhere else.
Our farm uses industry best-practice to ensure the highest standard of produce.
The majority of our oysters are grown from spat, which means they are farmed from the beginning of their life cycle.
The Binders have spent years perfecting the seasonality of their various sites across Smoky Bay so they can benefit from the diverse water conditions year-round.
During harvesting, our oysters go through a rigorous grading process using the latest technology to ensure they deliver the finest product to consumers.
